Mojito Recipe: White Rum, Mint & Lime

Makes 1 drinkPrepare just before serving

Ingredients

  • 45ml white Cuban rum
  • 20ml fresh lime juice
  • 6 mint sprigs
  • 2 teaspoons white cane sugar
  • Soda water, to top
  • Ice
  • Mint and a lime slice, to garnish

Method

  1. Combine mint, sugar and lime juice in the glass.
  2. Add a splash of soda and fill the glass with ice.
  3. Add the rum and top with soda.
  4. Stir lightly to combine, then add the mint and lime garnish.

Mint: aroma without a glass full of fragments

Handle the mint gently rather than tearing it into tiny pieces. The aim is to distribute its flavour through the drink while keeping the serving pleasant to sip. Add a fresh garnish to bring the aroma closer to the nose.

Sugar or syrup?

The published specification uses white cane sugar. If choosing syrup for service speed, specify its concentration and measure it consistently; a spoon of sugar and a spoon of syrup are not equivalent. See the simple syrup guide before substituting.

Soda is the finishing ingredient

Use chilled soda and add it at the end of the build. A light stir combines the ingredients without unnecessarily losing carbonation. The amount needed depends on glass size and ice, so leave enough room before topping.

An alcohol-free variation

For a mint-and-lime cooler, leave out the rum and adjust the soda and sweetness to taste. It is a different recipe with a lighter structure. Browse the alcohol-free section for more options.

Costing this drink for a menu

Add the cost of each measure, mixer and garnish, then allow for your actual wastage. The cocktail menu price calculator shows how those costs, a GP target and VAT combine. The example target is editable; choose one that fits your own venue.
